HOMEMADE BREAD & BUTTER PUDDING

Bread pudding recipe
It's good to have a yummy dessert during the festive time. Bread pudding would be a good option if you prefer to have a cozy time and this is specially suitable during the winter. I have tried the following bread pudding recipe and it came out really moist and yummy. You can easily try this at home with the available ingredients.

"Bread & Butter Pudding" is a customary bread pudding, which is popular in British cuisine and known to be originated in the United Kingdom during the 11th and 12th centuries.

During the early period, this was considered to be the "poor man's pudding" due to high popularity among the lower class community. Basically the bread pudding has been prepared as a method of using left over/staling breads instead of wasting. This pudding is alternatively known as "whitepot". Nevertheless this has evolved into a classy and trendy dessert which can be found in almost all the high star hotels and restaurants at present.

INGREDIENTS

  • Bread - 12 slices
  • Sugar - 2 tablespoons (fine grain)
  • Fresh milk - 600 ml
  • Eggs - 2 medium size
  • Vanilla - 1 teaspoon
  • Butter - enough amount to apply on bread and tray
  • Salt - ½ teaspoon
  • Cinnamon powder - 1 teaspoon
  • Dates - (10 - 15 medium size dates)
  • Almond or Cashew - 75 g (chopped)

METHOD

  • Step 1: Grease the baking tray with some butter and keep aside.
  • Step 2: Apply butter on both sides of the bread slices.
  • Step 3: Put a layer of bread inside the tray as a base layer. Add a layer of cut dates and chopped almond/cashew on the bread layer. Put the second bread layer on this and again add a layer of cut dates and chopped almond/cashew on it.
  • Step 4: Add eggs and sugar into fresh milk and whisk until a homogenous mixture appears. Subsequently add vanilla, cinnamon powder and salt into this mixture and give it a good stir.
  • Step 5: Pour this milk mixture onto the pre-arranged bread layers inside the tray and keep the tray aside for 20 minutes to soak the bread slices evenly.
  • Step 6: Preheat the oven to 180 Celsius. Once the oven is ready, put the baking tray inside the oven and bake for 30 – 40 minutes.
  • Step 7: After the pudding is properly baked, take the baking tray out form the oven. This can be served warm, specially as a dinner dessert.
  • Step 8: Keep inside the refrigerator for 3-4 hours, if you wish to serve it cold.
The above recipe is enough for 8 people. If your requirement is different you can adjust the ingredient quantities accordingly. This dessert can be eaten alone without any addition. But as per your preference this can also be served with custard cream or whipped cream. In addition to the dates, almonds/cashew nuts; you can also include different kinds of berries (strawberry/raspberry/blueberry) or any flavoured fruit jam or chocolate chips over the bread layers to have a different taste.
